The formaggetta (cheese round) is an institution in the Piedmont countryside. Today the denomination has brought together a group of producers in the best suited areas. One such example is Alcide Accusani who breeds a herd of goats on the fields around his home from whom he obtains the milk for the cheese rounds: fresh products and at various levels of ageing, they are exceptionally good by themselves, with a little oil or, for the more aged pieces, grated over pasta.
