The Castle of Roccaforte boasts a comprehensive supply chain: more than 400 Chamois coloured goats, fed on pasture and with fodder from the valley, according to the principles of organic farming. The production, which follows ancient traditions, bears the logo "Since 1489 on the table of the dukes of Milan", to recall a banquet organised by a forefather of the owners for the wedding of Gian Galeazzo Sforza with Isabella d'Aragona. You will find fresh caprini (also aromatised with herbs), robiola, Corona of goat and Campo dei Re (matured for two or three months) and Ghiottine of goat (with walnuts, hazelnuts and raisin, ideal for an aperitif). The sapid Marchesino di Roccaforte, the primosale Delizia of goat and the stracchino of goat are made from pasteurised milk. Newest entry: compact and flavourful yogurt.
